Creamy Herb Greek Leek Mashed Potatoes
Approx 1.5 lbs of golden potatoes
About a half a cup of sour cream
3 tablespoons Whole Herb Greek Leek Olive Oil
1 teaspoon garlic powder
fresh ground pepper
Cut potatoes into large chunks. Boil in water in a medium to large pot until soft enough to pierce with a fork easily. Drain. They should be tender, but relatively firm.
Transfer to a large bowl. Mash with a fork or potato masher. Add Olive Oil, sour cream, garlic powder. Mix together.
Add sea salt and fresh ground pepper to taste.
Transfer to a plate, drizzle a bit of olive oil on top and serve with main dish.
**If you want more seasoning, try adding in some bread dipping!
