Apricot Balsamic Grilled Pork
In a medium bowl whisk together balsamic and olive oil, honey, mustard, soy sauce, OJ, garlic, and a dash of salt and pepper. Add pork tenderloin pieces and toss. Cover and place in the fridge for an hour or overnight if you prefer.
Once the pork is marinated, Preheat the grill or have a grill pan on medium high.
Using metal skewers or wood (don’t forget to pre soak wood skewers for 30min), skew the pork. Grill for about 15 min turning them every 2 min until cooked through. Serve with your favorite side dish!
