Asiago Bruschetta Roasted Asparagus

Ingredients

1 pound of fresh asparagus

Salt and pepper to taste

2 tablespoons of Basil Olive Oil

3 roma tomatoes, diced

2 garlic cloves, minced

½ onion, diced

6 fresh basil leaves

½ cup shredded asiago

Preparation

Preheat the oven to 400 degrees.

Place asparagus on a baking sheet. Sprinkle it with salt and pepper. Drizzle with Basil Olive Oil. To make the Bruschetta toss together diced tomatoes, diced onion, garlic, basil leaves and a teaspoon of Basil Olive Oil. Top the asparagus with the mixture down the middle of the stalks. Sprinkle it with shredded cheese. Bake in the oven for 10 min until tender and the cheese is melted.
